Orange Turkey with VegetablesThis recipe is from "Chicken and Turkey for Today" by WatkinsWatkins. The booklet cookbook is only $3.95 and has loads of great recipes in it, including this one:
Preheat broiler. Cut zucchini and peppers lengthwise into long wedge; place on broiler pan. Cut tenderloin into piece about 1/2 inch thick. Place on broiler pan. Brush all with Liquid Spice. Sprinkle herb rub and salt over vegetable. Broil about 5 inches from heat source for 5-8 minutes, watching carefully to prevent scorching. In small saucepan, melt marmalade along with mustard. Turn the turkey and vegetables; brush turkey lightly with marmalade mixture. Broil for 2 minutes; turn tureky again and brush with marmalade mixture. Broil 2 mintues more or until cook through. Makes 4 servings. (well, according to THEIR recipe, anyway...) The entire recipe is:
Serve with other veggies on the side, or steamed barley prepared like couscous, with a flavored broth (chicken or vegetable). VEGETARIANS: Anything I do to meat, I also do to the vegetarian meat analogues, and I have used Smoked Turkey Style for this recipe quite successfully. Tofu would probably work well too! Karen |
