Frozen Peanut Butter Puddin' Pops

This snack is not for everyday of the week, unless you are in maintenance or unless you are a kid. Kids NEED more fat in their diet, so don't try to short change them. It is a source of monounsaturated fat, has wonderful cancer fighting agents, is great for folks who can't have dairy products, or for getting protein into recalcitrant children (hence it being named after my 4 year old!). If you can tolerate a higher ratio of carbs, add a few chocolate chips to the mix prior to serving. They only have 26 grams of carbs per 1/4 cup, and the mini bits go quite a way in this mixture.

I tried making this so the fat ratio wouldn't be so high and so we could easily add the chocolate chips for everyone, but adding protein powder made it taste disgusting! Enjoy it occasionally, and give it to your kids often.

Blend until smooth. Pour into 8 servings and decorate each with miniature semisweet chocolate baking bits. Freeze. Serve when frozen.
