Toffee Bars

This is my decadent little addition to the holiday pages. Would be good with a cup of tea or decaf. and a few soynuts on the side for protein. Gail

  • 24 each saltine crackers
  • 1 cup brown sugar, packed
  • 1 cup butter
  • 6 oz chocolate chips
  • 1 cup pecans -- chopped

Line a 9x13" pan with foil and butter generously. Lay saltine crackers on bottom of pan with edges touching. In a sauce pan-over medium heat- melt brown sugar and butter together stirring continuously and bol for 2 minutes. Pour evenly over crackers and bake for 4 minutes at 375 degrees. After removing from oven sprinkle with 6 oz. chocolate chips and when chips have softened spread evenly over bottom layer. Sprinkle with chopped pecans and press into chocolate layer gently. Cut into 48 squares before it gets too "set".

NOTES : This is similar to an almond roca. Each piece is 2 blocks fat and 1 block carb. and no protein.

KAREN NOTES: I goofed around with this recipe on paper and determined that you could make each piece be 1 carb block, 1 protein block and 3 fat blocks by substituting EIGHT CUPS of soynuts for the saltines, and increasing the semi-sweet chocolate chips to 10 ounces, but I think that is a BIT TOO MANY soynuts to do this...maybe not! TRY IT! All you would then have to do is cut down the butter, and maybe it would all work?
