Phony EggsWhy phony eggs? This one is easy! Egg yolks have arachadonic acid in there, just like organ meats, fatty red meat and walnuts. Arachadonic acid aids in the overproduction of bad eicosanoids. You can leave the yolk out of many dishes by substituting two egg whites for one whole egg. There are also issues of sensitivity in some individuals to eggs, so straight substitutes are desirable. That is a fact. Some people don't like them. That is an opinion. Make sure you know the difference before you get upset about anything you read here!
